Alessandro Bianchi is a PhD student (3rd year) in Agriculture, Food and Environment Program at Pisa University. He has got a bachelor’s degree in Viticulture and Oenology (2017) and a master’s degree with honours in Agri-Food Production and Agri-ecosystem Management (2019) from Pisa University. His PhD research project focuses on the evaluation of the shelf-life of different food matrices with high economic value and strongly linked to the Italian territory (wine, oil and bread). He would like to develop a combined method based on chemical, physical, sensory analyses and innovative non-destructive analyses, in order to set up the optimal combinations of storage parameters and to extend the product shelf-life thus reducing food waste. Its innovative approach could be useful to preserve the bioactive compounds and therefore their nutraceutical properties and their high quality to distinguish them from common ones. In 2023 year, Alessandro Bianchi is the author and co-author of 18 papers published in International journals indexed.
