With a background in Animal Production Sciences and a master’s degree in Biosafety and Food Quality from the University of Pisa, together with 5 years of experience in the field, he undertook a doctoral path. His passion for research revolves around extending the shelf life of baked goods to reduce food waste. It delves into the use of sourdough from the DOP Tuscan bread consortium, innovative ingredients extracted from fruit and vegetable by-products and explores compostable packaging solutions to combat global warming and get to the consumers clean and short food label. In three words: tradition, innovation, and sustainability. These are the values that guide him along the way.
